Additives in this list

Cocoa processed with alkali Cocoa
US food rules allow cacao nibs, or the cacao beans they come from, to be processed by heating with alkali ingredients. The food name must then include a statement such as "Processed with alkali". Lists that say only cocoa do not mention this processing.
Lecithin Lipid mixture
US food rules describe commercial lecithin as a naturally occurring mixture of phosphatides with smaller amounts of other lipids, isolated from vegetable oils. That rule names soy, safflower and corn oils. Some lists here name sunflower or soy as the source, and others say only lecithin.
Natural and artificial flavors Flavoring
Under US labeling rules, a natural flavor is an essential oil, extract or similar product whose flavoring parts come from sources such as spices, fruit, vegetables, herbs, meat, seafood, eggs or dairy, and whose main function in food is flavoring rather than nutrition. An artificial flavor is a substance used for flavor that does not come from those sources.
Potassium chloride Mineral salt
US food rules describe potassium chloride as a white, odorless solid prepared from source minerals. It dissolves in water and has a saline taste at low concentrations. The uses those rules list include flavor enhancer.
Sucralose Sweetener
Sucralose is a chemical compound that US food rules allow as a sweetener in foods generally. The FDA reports it as about 600 times sweeter than table sugar.
Stevia sweeteners Sweetener
The FDA describes steviol glycosides as natural constituents of the leaves of the stevia plant, Stevia rebaudiana, and reports them as 200 to 400 times sweeter than table sugar. Some lists here use a general name such as stevia, and others name a specific form such as Reb A or Reb M.
