Protein-digesting enzymes Enzyme
US food rules describe bromelain as an enzyme preparation from pineapples and papain as a proteolytic enzyme, meaning one that acts on protein, from papaya. ProHydrolase® is a branded ingredient that Momentous describes as an enzyme.
Natural and artificial flavors Flavoring
Under US labeling rules, a natural flavor is an essential oil, extract or similar product whose flavoring parts come from sources such as spices, fruit, vegetables, herbs, meat, seafood, eggs or dairy, and whose main function in food is flavoring rather than nutrition. An artificial flavor is a substance used for flavor that does not come from those sources.
Monk fruit extract Sweetener
The FDA describes monk fruit, also called luo han guo, as a plant native to southern China, known by the botanical name Siraitia grosvenorii. The FDA covers its fruit extract on its sweeteners page and says the extract contains varying levels of compounds called mogrosides.
Stevia sweeteners Sweetener
The FDA describes steviol glycosides as natural constituents of the leaves of the stevia plant, Stevia rebaudiana, and reports them as 200 to 400 times sweeter than table sugar. Some lists here use a general name such as stevia, and others name a specific form such as Reb A or Reb M.
